Chicken Tortilla Soup

Chicken Tortilla Soup

This is an easy, cheap, and reasonably nutritious meal we've been enjoying. When I say reasonable nutritious, I mean fairly low in calories and fat.

First, chop a WHOLE onion.



Mince 2-4 cloves of garlic, depending on how much you like garlic. So for me, 5 cloves.



Another bonus....Can you imagine how bad I'll be when I have a REAL CHILD? He's my real baby for now.



Cut up your chicken and add it to the onions and garlic.


Cook the chicken on medium heat until done. It's going to smell delicious.



Next measure out 1/4 cp of dry taco seasoning (or 1 packet) and add it to the chicken mixture.



Like so.



Add the can of Rotel,



the corn,



the rinsed and drained black beans,



and the chicken broth.



Let that simmer and then add the cream of chicken soup.



Let that simmer for a good while. Long enough to give your dog a bath and teach him to give a high 5!



I like to top it off with tortilla chips, or strips in this case, sour cream, green onions and shredded cheese. If you were wanting to keep it "fairly nutritious" like I said above, might want to hold off on the sour cream and cheese, or make it lowfat/ff.

Ingredients-

3-4 chicken breasts

1 yellow onion

2-4 cloves of garlic, minced

1/4 cp taco seasoning (or 1 packet)

Can of rotel

Can of corn

Can of black beans

Carton of Chicken Broth

Optional Toppings: Tortilla strips, shredded cheese, sour cream, green onions, jalapenos, avacado, pico de gallo - your options are limitless!
